
Just in case you are new to our family, you should know I make my menus each week based on what I have in my stockpile. You will only see six menus listed because everyone needs a night off. On that night, we eat leftovers from the freezer, sandwiches and soup, or go out to eat (with coupons, of course).
I cook these at random throughout the week. I have everything in the refrigerator or prepped in the freezer and can cook whatever I feel like each night. This might work for you or you might need to assign certain meals to specific nights.
And, why desserts? I have three small children (with one being autistic) and this helps me bribe them to try new things.

1) Ricotta Parmesan Chicken, Strawberry-Spinach Salad with Balsamic Dressing.
Last week when THIS recipe dropped into my inbox from the Fairhope Foodie, I knew that I had to try it! I hope you enjoy it too!
As for the salad, just toss some fresh salad greens (I prefer Spinach) with sliced strawberries and a homemade Balsamic dressing that you can find HERE. I like to toast pecans and sprinkle them on top too!
2) Grilled Lemon Chicken, Frozen Vegetables
We are going to try some power cooking on the grill this week and this will be one of the recipes I try. You can find this on page 122 of Jillian Michael’s new cookbook, The Master Your Metabolism Cookbook. If you are trying to eat healthier and really have no clue why clean eating is important, I HIGHLY recommend this book as well as the Master Your Metabolismbook. I will repost an old review I wrote later.
3) Mediterranean Tuna Salad Rolls, Pretzels
From page 107 of the Master Your Metabolism Cookbook, this recipe will help me use some of the tuna in my stockpile. However, since I do not like capers, I will probably chop some black olives instead.
4) Green Bean Salad with Shrimp or Chicken
Another recipe from the Master Your Metabolism Cookbook, you can find this one on page 98. This recipe looks super simple.
5) Pork Tenderloin with Mustard Sauce with Wild Rice, Frozen Veggie

6) Spaghetti with Meatballs, Steamed Broccoli
This one will come straight out of the abundance of spaghetti sauce and noodles in my stockpile. Also, while I am not big on prepared meats, Winn Dixie has Armor Meatballs on BOGO until Tuesday. Some nights, you just have to grab something quick!

1) Apple Crisp with Crunchy Oat and Brown Sugar Topping
Find this yummy recipe on page 246 of Mary Ostyn’s cookbook, Family Feast for $75 a Week. Sorry, I could not find this recipe online.
2) Homemade Chocolate Chip Cookies
Always fun! I plan to do some batch cooking and freeze the dough in individual balls so I can just pull them out and bake. I will let you know how it goes! I think I will try the recipe from Mary Ostyn’s cookbook… or maybe the one from the back of the bag.
3) Mixed Fruit with Organic Yogurt and Granola
