When you want chocolate, YOU WANT CHOCOLATE. Know what I mean? Okay, so maybe if you are a guy, you might not understand but I can sense the ladies nodding. Most of them anyway.
Who wants to wait around for a cake to cook? And cool? And be frosted?
So, I decided to tweak a recipe I had for a microwave cake into something smaller and more manageable for one person.
1 boxed cake mix with ingredients to make the cake
1 tub icing
Prepare the cake mix according to package directions and scoop some into a microwaveable coffee mug. Only fill the mug half way or less. Trust me… I’m an expert (as you will soon see.)
Use a cookie scoop or melon baller or spoon to dish out one huge mound of icing. About 3 tablespoons… more or less.
Let the icing gently slid into the center of the coffee mug on top of the cake batter. Listen for the delicious-sounding plop.
Place the mug on a paper towel (trust me… we are getting there…) in the middle of your microwave. Punch buttons for 3 minutes on high.
Step back and watch the magic happen.
Now, I should warn you that the cake will rise and if you put too much batter into the mug…
You will be thankful I suggested the paper towel.
Remove the coffee mug from the microwave, using a mitt because it will be hot. Flip the coffee mug over into a bowl. Lift and watch the melted icing drip back over the moist cake now resting in your bowl.
Serve with whipped topping or ice cream.
Put the rest of the batter and icing in the refrigerator, covered tightly, to use tomorrow.
Messy? Yes. But, man! It is so good.
And, you should know that when I used less batter, the cake still rose but did not overflow the cup.
