Sitting in the dental office with the hygienist working her magic on my teeth, our conversation turned to nutrition. She is gluten free (as I have chosen to be) and was frustrated by the time it takes to create gluten free desserts.

I had recently noticed the new packages at Walmart in the baking aisle. Since they had cake mixes, I grabbed my phone and searched for gluten free frosting. Imagine my surprise learning ALL of the Pillsbury icings are gluten free.

I love keeping quick mixes available in my pantry for spontaneous fun in the kitchen with my family… And for those days when the kids suddenly announce they need a sweet treat at school the next day.

The school sends home notices in advance. The notes, however, often fall between the cracks of the sofa and lurk… waiting to catch me unprepared and stressed.

  

Not this time! My cabinets were ready and my sweet kindergartner was thrilled to help prepare cookies for her class to sell to “the big kids.”

Since I was using Pillsbury™ Gluten Free baking mixes, the steps were simple. With a little supervision, she was able to do so much on her own. (sniffle, sniffle – If they could only stay small!)

I was happy to know that I was providing a treat everyone could enjoy, especially the children who normally miss out on bake sales because they have gluten sensitivities.

But my favorite part of the afternoon, was listening to her stories…

And seeing her smile.

And knowing how proud she was to be helping me in the kitchen.
