I wish I could take the credit for this healthy, kid-friendly recipe but I can’t because I owe all the credit to Abby Cadabby! I adapted it from her recipe in Sesame Street “C” is for Cooking, 40th Anniversary Edition.
This is an easy lunch or dinner that my children always enjoy and now that they are old enough, the kids can even help me prepare some of it.
The hardest part is scoring the baby carrots and then slicing them so they look like flowers.
Kid-Friendly Recipe: Butterflies & Trees Pasta
Ingredients
- 1 cup cubed ham
- 1/2 cup baby carrots scored and sliced
- 1 cup broccoli blanched
- 8 ounces farfalle pasta
- 1-2 tablespoons butter
- 1/4 cup grated Parmesan cheese
Instructions
- Prepare the pasta according to package directions.
- During the last three to five minutes of cooking time, toss in the scored and sliced carrots as well as the broccoli. (Carrots and broccoli can be left raw.)
- Drain well. Stir in ham and toss with butter and Parmesan.
