
Here is what Penny is cooking from the stockpile this week:
1) Chicken and Sausage Jambalaya, Broccoli Cornbread
This recipe actually comes from Vickie L. in our recent church cookbook which you can see HERE. It is FABULOUS!

2) Pancakes and Bacon with Fruit
Do you really need a recipe?
3) Spaghetti, frozen veggie
Again, do you need a recipe? LOL!
4) Balsamic Chicken with White Beans
I am lifting this recipe from page 78 of Rachel Ray’s cookbook, Express Lane Meals, but can also find the recipe HERE.
5) Sauteed Porkchops with Tomato Gravy, Mashed Potatoes, Biscuits
This is super simple. Pat pork chops dry and season with salt and pepper. Heat a tablespoon of oil in skillet over high heat until just smoking, then saute chops until browned and just cooked through, about 3 minutes on each side. Transfer chops to a platter and keep warm, covered. Pour off a little of the fat from the pan. Add about 2 tablespoons minced onion and a one clove of minced garlic (optional). When the garlic is fragrant, stir in one can of diced tomatoes. Add salt and pepper to taste. Bring to a boil and reduce heat. Simmer until thickened slightly.
6) Bacon Wrapped Beef Filets, Boxed Cheesy Potatoes, Frozen Veggie
I have these because Chef’s Request had a coupon for $3 off and these are only $3.68 at Walmart. The recipe I will use is HERE.
Desserts:
1) Chocolate Mint Brownies
Prepare your brownie baking dish with a spritz of nonstick spay, a layer of parchment paper (cut to fit) and another spritz of nonstick cooking spray. Use a boxed brownie mix and mix according to package directions. Pour half the batter into the prepared dish. Place unwrapped peppermint patties in a single layer. Pour the rest of the batter over the candies. Bake according to package directions in a 350 degree oven or until a toothpick inserted comes out clean with a few moist crumbs attached. Allow to cool completely before removing from pan.
2) Pudding with Crushed Cookie Topping
Use your choice of pudding a cookies. I like chocolate pudding with oreos or vanilla pudding with vanilla wafers.
3) Fruit Cocktail
