I have been a total slacker when it comes to menus lately. You might have even wondered where my menu calendar is for March. There isn’t one. {GASP} We have been eating from the freezer that I stocked in February and… hold on… eating up {pun intended} some of our tax refund with take-out food. Not exactly what I planned for March when I thought about it in February but it has become our reality and I think the problem is that I did not make a menu calendar before Ariary’s arrival, which came so close to the end of the month.
In order to save us from further peril, I am working to create a calendar for the rest of the month. Who knows if I will find the time to get it finished since I can barely find time to brush my teeth lately but I cannot get caught back in the lure of fast food and take-out menus. So, here is my simplified plan for the week:
Monday ~ Beef O’Bradys (To fulfill a promise to Franc before we swear off eating out again.)
Tuesday ~ Chinese Pork Chops, Fried Rice, Teriyaki Vegetables (Green Giant), Egg Rolls
Wednesday ~ BBQ Pulled Pork Sandwiches, Tator Tots, Carrot Sticks and Cucumber Slices
Thursday ~ St Patrick’s Day menu that I have yet to decide
Friday ~ Chef’s Salad
Saturday ~ Cheeseburger Macaroni, Frozen Vegetable
Today I am fixing chicken and sausage gumbo, Tuesday I will have leftovers, Wednesday I will fix meatballs and spaghetti w/ salad and garlic bread, Thursday (St. Paddy’s Day) I will fix steamed cabbage with corned beef. sweet potatoes and blackeye peas w/ cornbread, Friday,hotdogs and oven fries.
