Monday Menus ~ Week of June 7th

Today’s edition on Monday Menus is pulled from my favorite websites since my son had surgery (ear tubes) this morning and I needed something quick to post.  I know you understand!

Just in case you are new to our family, you should know I make my menus each week based on what I have in my stockpile. You will only see six menus listed because everyone needs a night off. On that night, we eat leftovers from the freezer, sandwiches and soup, or go out to eat (with coupons, of course).

I cook these at random throughout the week. I have everything in the refrigerator or prepped in the freezer and can cook whatever I feel like each night. This might work for you or you might need to assign certain meals to specific nights.

And, why desserts? I have three small children (with one being autistic) and this helps me bribe them to try new things.

Batch Cooking ~ Dry Beans (Trying out my new rice cooker for cooking dry beans!), Cinnamon Rolls (Bill’s request), Biscuits

Power Cooking ~ Yeah, that’s not gonna happen this week! (LOL)

Basic Cooking ~ Wheat Bread (new recipe!)

 

This Week’s Menus ~

1) Creamy Chicken Taco Pasta
Love, love, LOVE $5 Dinners! You can find this recipe on her website HERE.

2) Grilled Porkchops, Roasted Potatoes, Frozen Vegetable
We MIGHT do a little power cooking on the grill this week but it might just end up being this recipe HERE. For the potatoes, you can the recipe HERE. I make my onion soup mix from scratch using THIS recipe.

3) Ham & Cheese Omelet Roll, Biscuits
Back in my Pampered Chef days, I made THIS recipe for demonstrations and always got tons of oohs and ahhs. While ti looks difficult, it is so simple and very delicious. To add some vegetables to the dish, I will saute some onions, mushrooms and bell peppers and add with the ham.  Personally, I like it with biscuits. Since we try to make everything from scratch, I will use THIS recipe for the biscuits.

4) Pineapple Chicken Kabob Salad
Cracker Barrel has a summer salad with pineapple and grilled chicken that is so good but I cannot afford to pay that price for a meal that will cost me just a few dollars to make. So, I was able to find a recipe HERE for the chicken and a recipe HERE for the dressing.

5) Old Settler’s Beans, Broccoli Cornbread
You can find this recipe from the new post “Beans & Rice” HERE and a recipe for broccoli cornbread HERE. Again, no boxed mixes here. So, you can make your own cornbread mix HERE.

6) Chicken Risotto, Frozen Vegetable
An easy “walk away” recipe, you can find it HERE.

DESSERTS
1) Chocolate Peanut Butter Ice Cream

We love homemade ice cream in the summer and I am looking for recipes that are loaded with goodies to keep me from having to go to the store to stock up on the expensive (Ben & Jerry’s) varieties. So, I am going to try THIS recipe. Looks GOOD!

2) Jello with Cool Whip
Gotta do something with that leftover Cool Whip.

3) Chocolate Chip Cookies
Call me traditional but I like the recipe on the back of the bag.
