Monday Menus: Week of March 15th

Menu Planning is the fun part of stockpiling. Instead of running to the store for ingredients at 5 pm each day, I shop in my own home.  If you want to know what is in my pantry, CLICK HERE.

This week is an internet-friendly menu week. No cookbooks. Just fun at the computer looking for great recipes. Enjoy!

1) Bacon and Potato Chowder, Cheese Biscuits
I have a huge bag of potatoes and I have got to do something with them so I looked up THIS RECIPE from an old Penny menu but will add a twist with some Cheesy Biscuits from HERE

2) White Chicken Pizza
This is a family favorite and when I stockpiled Classico Alfredo Sauce at Winn Dixie last week, I knew this would be on the menu. Make a pizza crust and smear it with alfredo sauce. Top your pizza with your choice of baby spinach, artichoke hearts, broccoli florets, black olives, red peppers, mushrooms, cooked chicken, feta cheese, parmesan cheese and or mozzerella cheese. Bake in a 350 degree oven for 10 to 20 minutes or until the cheese is melted. The time depends on how many toppings you have on your pizza.

3) Rachel Ray’s Taco Bowls with Guac-A-Salsa
This is another famliy favorite in our house. I guess I am just in the mood for homestyle favorites. Check out this recipe HERE.

4) Red Beans and Rice, Cornbread, Turnip Greens
The joke in our house when we have red beans and rice is the old church bulletin joke, “Bean Supper. Music to follow.” Actually, if you rinse your beans before and after you soak them, this will cut down on the musical after-effects. You can find a great recipe HERE.

5) Crock Pot Corned Beef & Cabbage
Since these ingredients will be on sale in abundance this week, I put it on the menu. Try THIS RECIPE for an easy, one (crock) pot dinner!

6) Balsamic Chicken with Onions, Rice, Frozen Veggie (or Fresh Broccoli)
THIS RECIPE is from one of my favorite blogs, $5 Dinners. Cheap, easy and yummy!

DESSERTS
Why do I fix dessert? It gives me a way to bribe my children to eat. Shameless and true.

1) Turtle Brownies
From a boxed mix.

2) Jello & Cool Whip

3) Bananas & Strawberries

  • Corned Beef Brisket (4.5 lbs)
  • Cabbage
  • Avocado
  • Sour Cream
  • Tomato
  • Baby Spinach
  • Artichoke Hearts, canned (Was waiting for a BOGO but I am OUT!)
  • Broccoli
  • Red Peppers, if on sale
  • Mushrooms
  • Feta Cheese (One of life’s little, expensive, guilty pleasures!)
