When a trip to the beach fell without our month that we were striving to be gluten free in honor of Autism Awareness Month, I faced a dilemma. Did I fudge and go off our plan to try the gluten free diet, keeping quiet so no one would know, or should I really try to stick with the plan and pack a picnic basket full of gluten free goodness?
Since I have gained an intense appreciation of those who MUST eat a gluten free diet every day, I decided to ditch the wheat and take no gluten to the beach.
What to pack in a gluten free picnic basket
Bill assumed we would be having sandwiches and I knew that Udi’s Gluten Free bread was the obvious solution. However, the problem is that I still struggle to determine the list of hidden gluten. As I stood staring at the meat case, I considered going to the deli counter but feared I would not be able to see the ingredients. Then, like a ray of golden sunshine, I saw an entire line of Tyson deli meats proudly boasting the “gluten free” label right on the front. Crisis averted.
As I marched down the aisle of my local Walmart feeling very proud of myself, I decided to swing by the (very tiny) part of the store where I knew I could find gluten free products. Surprisingly, there was quite a supply of gluten free snacks from Glutino.
After a a little thought, this is what we packed for our trip to the beach:
- Sandwiches made with Tyson and Udi’s Gluten Free bread
- Apples, whole
- Grape tomatoes
- Cucumbers, sliced
- Baby carrots
- Grapes
- Cheese sticks
- Fritos Corn Chips
- Udi’s Oatmeal Raisin Cookies
- Glutino Chocolate Sandwich Cookies
- Angry Birds Gummy Snacks
- Bottled Water

We tried this on our vacation while we were driving in the car… rice cakes with squeezable pizza sauce and pepperoni’s. We’re dairy free so we did without the cheese and ate our fill! 🙂 I think it would go good in a picnic basket too!
