My last trip for produce ended badly… with a bunch of rotten bananas. Beautiful on the outside. Dark on the inside but I was determined not to waste and stirred up a batch of banana nut bread adapted from a recipe in Southern Living Homestyle Cooking.
Perfect on the side with a bowl of cereal or with fruit. Delicious.
RECIPE: Oh Bananas! (Nut Bread)
Ingredients
DRY:
- 2 1/4 cups all purpose flour
- 1 tablespoon plus 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup firmly packed light brown sugar
- 1/4 cup sugar
- 1 1/2 teaspoons ground cinnamon
WET:
- 1 1/4 cups mashed ripe bananas about four
- 1/3 cup milk
- 3 tablespoons vegetable oil
- 1 large egg
- 1 teaspoon white vinegar
STIR-IN:
- 1 cup coarsely chopped nuts I used toasted pecans
Instructions
- Mix dry ingredients together. Make a well in the center.
- Mix wet ingredients together, whisking together well. Pour into well of dry ingredeints, stirring just until moistened.
- Stir in nuts.
- Spoon batter into a greased 9×5 inch loaf pan. Bake at 350 degrees for one hour or until a cake tester somes out clean.
- Cool on wire rack for 10 minutes and then remove from pan. Cool completely on wire rack and then wrap in aluminum foil.
