I love mashed potatoes. Seriously. They could be a food group for me… right next to bacon. But, all the peeling and chopping and boiling. UGH. Who has time for that? So, I simplified my mashed potatoes.
Start by scrubbing, piercing, and wrapping your potatoes in plastic wrap. Pop those bad boys in the microwave until soft. The time depends on the size of your microwave and the size of you potatoes, but for me, it takes about 13 minutes.
Put your butter and cream cheese… oh yes… I DID say “cream cheese” into your bowl. Bob Harper, eat your heart out.
When the potatoes are done and have cooled slightly, remove the skins. I use a spoon and just kind of scoop around the edges. If some peel stays in, who really cares? Just consider it a little extra fiber in your diet.
Sprinkle with salt and pepper. Mash away the stresses of the day. Or, just let your KitchenAid do the work.
Stir in some milk and serve.
Delicious and easy.
