I love a fresh salad with Jamacain Jerk Chicken and grilled pineapple! (Can you tell I have been thinking about summer?) The problem with a salad like that is I am never sure what type of dressing to use over it. So, last year, I made my own.
Juice, reserved from drained can of pineapple
Juice, squeezed from 2 lemons
1 clove of garlic, pressed
1/4 cup Mayonnaise
1 tablespoon Honey
Salt & Pepper, to taste
Simmer juices and garlic over medium heat until reduced to half, stirring occasionally. Cool. Mix with mayonnaise and honey. Salt and pepper to taste.
