Simply Delicious Southwestern Salad - Gluten Free and AMAZING from @chaosandclutter

It’s been just over a year now since we made the decision to eliminate gluten from our son’s diet. He has Aspergers and we had heard that other families had seen big improvements in their kids by going this route so we decided to give it a try. It made an incredible difference for him and we haven’t looked back!

There’s no reason that a gluten free diet has to be boring and bland. We love this southwestern salad and it is so easy to throw together! The results are colourful and delicious and even fit for serving at a gathering.

In a serving bowl, throw in:

19 oz. can of black beans, drained and rinsed
12 oz. can of kernel corn, drained
3 chopped tomatoes
1/2 – 1 diced purple onion
1 bunch of cilantro, chopped

In a small bowl, mix together:

3 Tbsp. mayo
1-2 tsp. hot sauce (we like things spicy so you can adjust to your taste)
1 Tbsp. olive oil
2 tsp. lemon juice
2 cloves freshly minced garlic
dash of sea salt

Pour dressing over salad and serve. (This salad also makes a fabulously addictive dip for tortilla chips!)
