Place all ingredients into a freezer bag and shake. Freeze up to 6 months.
To make the cookies:
Cream together 1 egg, 1/2 cup butter (softened), and 1 teaspoon vanilla. Stir in the dry mix.
Use your medium cookie scoop to make balls of cookie dough. Bake at 350 degrees for 12-16 minutes, depending on how crunchy you like your cookies. For chewy cookies, cool for about 7 minutes on the baking sheet before moving to a cooling rack.
